Sauteed Shrimp & Coleslaw

This dish is quick & tasty for dinners on-the-go.  If you’re trying to lower your intake of rice or pasta, coleslaw adds variety with lots of crunch.  You also get an antioxidant boost with all the cruciferous extract it contains.

Ingredients:

  • 1 tbsp coconut oil

  • ½ yellow onion, chopped

  • 2 garlic cloves, minced

  • 600 grams large shrimp, peeled & deveined

  • ½ cup grape tomatoes, sliced

  • ½ cup yellow pepper, diced

  • 1 tsp lemon juice

  • ½ tsp honey or monk fruit sweetener

  • ½ tsp basil flakes

  • ¼ tsp fine sea salt

  • pinch of cayenne pepper

  • pinch of ground black pepper

  • handful of chopped fresh parsley

  • 5-6 cups coleslawTry this recipe

Make it:

  • In a large skillet, heat coconut oil on medium heat.

  • Add onion and garlic, sauteing for 1 minute.

  • Add shrimp and saute for 5 minutes.

  • Stir in all remaining ingredients, except the coleslaw, and cover for 3 minutes.

  • Spoon shrimp mixture over beds of coleslaw on individual plates and serve immediately. Enjoy!
