Salmon-Chard Salad

Get your greens

There are so many greens to choose from: Spinach, mesclun mix, kale, cabbage. This salad is very quick to prepare and doesn’t involve too much chopping, but it’s very flavorful and a great addition to lunch or dinner.

Ingredients:

  • 2 cups swiss chard/baby spinach mix

  • 1/4 cup grape tomatoes

  • 1/4 cup sliced cucumber

  • baked wild pacific salmon fillet (cold)

  • 1 tbsp raw almonds

  • 1 tbsp raw sunflower seeds

Dressing:

  • 2 tbsp extra virgin olive oil

  • 2 tbsp apple cider vinegar

  • 1 tbsp dijon mustard

  • 1/8 tsp dried basil flakes

  • pinch of salt

Make it:

  • Combine & whisk dressing ingredients

  • toss with greens & serve.
