Summer snacking can be nutritious, delicious and SIMPLE. Watermelon is one of those treats most little kids (and big kids) look forward to when the warm weather emerges. For a fun spin on a summer original, try this refreshing recipe!

Minted Watermelon Pops

Yield: 8 popsicles

Ingredients:

  • 4 cups cubed watermelon flesh (about 1 pound, rind removed)

  • ¼ cup of mint leaves, minced

  • 1 tablespoon freshly squeezed lime juice

  • 1 tablespoon raw, local honey

  • Pinch of himalayan pink salt

Make it:

  • Blend the watermelon, mint, lime juice, and honey in a high-powered blender.

  • Pour the puree into 8 popsicle molds or 2 standard ice cube trays.

  • Insert popsicle sticks halfway through freezing.

  • Freeze until hard (about 3 hours) & Enjoy!
